Pumpkin Bread (90)

Ingredients:

Butter for pans
4 Eggs
2/3 Cup Shortening
16 oz. Can Pumpkin Pie Filling
3 ½ Cups Flour – Sifted
2 2/3 Cups Sugar
2 Tsp. Baking Soda
½ Tsp. Baking Powder
1 ½ Tsp. Salt
1 Tsp. Cinnamon
1 Tsp. Nutmeg
½ Tsp. Cloves – Powdered
2/3 Walnuts – Chopped
2/3 Cup Raisins – Chopped


1. Butter 2 8 ½ x 4 ½ x 2 ½ inch loaf pans. Pre-heat oven to 350 degrees F.

2. Beat eggs. Mix in shortening and 2/3 cup water. Stir in the pumpkin pie filling.

3. Mix together and sift the flour, sugar, baking soda, baking powder, salt and spices. Stir the mixture into the pumpkin mixture using a wire whisk.

4. Pour into prepared loaf pans and bake for 65 minutes or until a tester comes out clean. Bread should be moist.

5. Cool on racks in the pans. Remove when cool.
