- 1 Cup All-purpose Four – Sifts
- ¼ Tsp. Salt
- ¾ Cup Milk – Plus
- 2 Tbsp. Milk
- 2 Eggs
- 1 Tbsp. Butter – melted
- Butter for the pan
1. Pre-heat the oven to 450 degrees F. Butter 9 holes of a muffin pan or an equal number of custard cups.
2. Sift the flour and salt together and gradually add milk, beating with a wooden spoon to make a smooth batter. Beat eggs until light and add to batter. Add the melted butter and beat vigorously.
3. Let muffin pan or custard cups heat in the oven for 5 minutes. Then fill 2/3 full with batter and bake for 30 minutes. Lower heat to 350 degrees F. and bake 10 minutes longer.
