Marinated Cucumbers (42)
Yields: 6 Servings
- 1 Cup Vegetable Oil
- ½ Cup Vinegar
- 1 Tbsp. Sugar
- Salt and Pepper
- 1 Medium Onion – peeled and sliced
- 2 Cucumbers – Peeled and sliced
Mix together in a quart jar the oil, vinegar, sugar, salt and pepper.
Alternate adding the onions and cucumbers, adding a pinch of salt and pepper after each layer.
When the jar is filled, cover with the top and shake.
Refrigerate at least 12 hours before serving. They will hold their flavor and consistency for 10-14 days.
