Hong Kong Sweet & Sour Pork (192)

Ingredients:

1 ½ lbs. Pork – Diced into 1” Cubes
2 Eggs
½ Tsp. Salt
½ Cup Flour
1 ¼ Cups Water
Vegetable Oil for Frying
½ Cup Vinegar
¼ Cup Brown Sugar
1 Tbsp. Molasses
2 Tbsp. Cornstarch
1 8 oz. Can Pineapple Chunks
1 Tomatoes – Cut up
1 Green Pepper – Cut up


1. Make batter using eggs, salt, flour and water.
2. Coat pork in the batter and fry until golden brown.
3. Make sauce with the vinegar, brown sugar, molasses and ¾ cup pineapple juice and water.
4. Thicken with cornstarch.
5. Add pineapple, tomatoes and green pepper and pour over the pork.
6. Serve over rice.
