Coconut Pecan Macaroons (129)

2 Egg Whites
1 Dash Salt
½ Tsp. Vanilla
2/3 Cup Sugar
3 ½ oz. Can Coconut

1. Beat the egg whites with the salt and vanilla until soft peaks start to form. Gradually add sugar, beating until stiff.

2. Mix the coconut and pecans. Fold in the egg white mixture.

3. Drop 1 tsp. portions onto a greased cookie sheet. Bake for 20 minutes at 325 degrees F.
