Black Bottom Cupcakes (45)

½ lb. Cream Cheese
1 Egg – Beaten
1 Tbsp. Sugar
1/8 Tsp. Salt
6 oz. Chocolate Bits
3 Cups Flour – Sifted
½ Cup Cocoa
2 Cups Sugar
1 Tbsp. Baking Soda
1 Tsp. Salt
2 Cups Water
2 Tbsp. Vinegar
2/3 Cup Salad Oil
2 Tsp. Vanilla

Combine the cream cheese, egg, sugar and salt and mix by hand. Then stir in the chocolate buts and set this mixture aside.

Preheat the oven to 350 degrees.

Sift the flour, cocoa, sugar, soda and salt together. Add the water, oil, vinegar and vanilla and beat well. It will be very difficult at first but keep at it.

Use muffin tins and paper liners, filling ½ to ¾ full with the dark mixture (four and cocoa). Then drop 1 tbsp. of the cheese mixture on top of each one.

Bake for 20 minutes.
